The Big Green Egg is talked about all over, but what is it?
If you have no idea what it is, let me tell you it is a very large ceramic, egg shaped vessel, and it’s green. The top of the egg, the lid, is hinged, to allow access to the cooking area. The Big Green Egg comes in five sizes, mini is 9inches in diameter, small is 13 inches in diameter, medium is 15 inches in diameter, large is 18 inches in diameter, and the extra large is 24 inches in diameter.
This method of cooking is not unique to the modern world, it is based on an ancient clay cooker known as a Kamado. This strange looking ceramic pot, can reach amazingly high temperatures, and it can also cook at temperatures as low as 125 degrees.The Big Green Egg was first manufactured in Atlanta Georgia, in 1974, and from small beginnings, has managed to spread throughout the world.
There is a thermometer built in to the unit so you can tell how hot it is at any time as well as a vent at the bottom of the unit near the charcoal that allows the user to regulate the temperature. The egg shape is well designed to control heat evenly and will produce outstanding results, unmatched by any other cooking.

The Fuel for the egg is lump charcoal, and all you need is a natural starter cube, not one of those smelly starter cubes which release foul odors, and lots of smoke, and must not be used in the ceramic egg. The reason for this is that the ceramic surface is porous, and would absorb the nasty chemical fumes.
If you are intending to use it as a smoker, you can add various types of wood chips, which will enhance the smoked flavor.
